FALL AND WINTER RECIPE

Butternut Squash Soup

1 medium butternut squash, peeled and seeded

2 TBSP unsalted butter or olive oil

6 cups chicken or vegetable stock

1 medium onion, chopped

1 medium carrot, sliced

1 clove garlic, minced

1 medium apple, sliced

Salt,pepper and nutmeg to taste

Cut squash into 1-inch chunks. In large pot saute onion, carrot, and garlic in the olive oil and cook until translucent, about 7 minutes. Add squash and stock. Bring to a simmer and cook until squash is tender, about 15 to 20 minutes. Cool slightly and place in Vita-Mix with the sliced apples and puree. Return blended soup to pot and warm. Season with nutmeg, salt, and pepper. Serve.

Try topping with finely chopped chives, sliced almonds, and a dollop of creme fraiche or plain yogurt.

Restorative Pose of the Month: Viparita Karani

Viparita Karani or Legs up the Wall is one of the most imporant restorative poses Extending the legs up the wall helps to reduce swelling and fatigue in the legs, reverses the flow of blood & lymph, enhances the circulatory system, lowers blood pressure, helps to slow the heart rate, relieves indigestion and helps with insomnia. In addition to reducing stress, it's a great way to see the world from a new perspective!  Try this for 15-20 minutes per day to increase a sense of peace and well-being.
